Sync to Skyward window by default has all assignments, quizzes, and graded discussions with the Sync to Skyward box checked showing each time you go to sync. If you are having to uncheck all and then scroll through each time to select just the take you want to sync, try the following.
Go to Quizzes, Graded Discussions, or Assignments main page from the Left Navigation Menu on your course home page. They look like this:
Then click the green sync icon to turn it off. It will turn black and then those tasks will not show to be a part of the sync.
