If a teacher needs to make an edit to a quiz that had submissions, they can make the edits for Multiple Choice, True/False, and Multiple Answer and then choose to “Update Question” to trigger the regrade options. Canvas prompts you to make a selection about how to regrade, pick from the correct option in the menu which appears when you make the change.

If you are making a change to a quiz which does not trigger the above regrade (such as deleted a question), then you will need to enter each submission from the Speedgrader, confirm the scores, and then choose “Update Scores” at the bottom of the page. You will get the following warning in SpeedGrader.
